Earl Grey Cake

Ingredients:

240ml milk
12g Temmerman Ming SIng Earl Grey tea
190g flour
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 tsp salt
115g unsalted butter
200g sugar
2 large eggs
1 tsp vanilla extract

Recipe:

Preheat oven to 175°C. Grease a loaf pan.
Heat milk to boiling point and let tea steep for 10 minutes. Let cool.
In a bowl, combine flour, baking powder, baking soda and salt.
Beat butter and sugar until fluffy. Add eggs one at a time, followed by vanilla extract.
Add flour mixture and tea infusion alternately to butter mixture. Mix until just combined.
Pour batter into loaf pan and bake for 45-50 minutes. Let cool before cutting.
